Easy Poha Recipe – A Healthy Indian Breakfast
Poha is a light, flavorful, and quick Indian breakfast made with flattened rice, onions, peanuts, and mild spices. It is popular across India because it is easy to prepare and perfect for busy mornings.

Ingredients
- 2 cups thick poha (flattened rice)
- 1 medium onion, finely chopped
- 1 green chili, chopped
- 2 tablespoons peanuts
- 8–10 curry leaves
- 1 small potato, diced (optional)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon oil
- 1 teaspoon sugar (optional)
- Fresh coriander leaves for garnish
- Lemon wedges for serving
Instructions
Step 1: Wash the Poha
Rinse the poha gently in water 1–2 times. Drain the water completely and let it rest for 5 minutes. The poha will become soft.
Step 2: Prepare the Tempering
Heat oil in a pan. Add mustard seeds and let them crackle. Add peanuts and roast until crunchy.
Step 3: Add Vegetables
Add curry leaves, green chili, onions, and potatoes. Cook until the onions turn soft and the potatoes become tender.
Step 4: Add Spices
Mix in turmeric powder and salt. Stir well so the spices coat the vegetables evenly.
Step 5: Cook the Poha
Add the softened poha to the pan. Mix gently to avoid breaking the flakes. Cook for 2–3 minutes on low heat.
Step 6: Garnish and Serve
Turn off the heat. Garnish with fresh coriander leaves and serve hot with lemon wedges.
Tips for Perfect Poha
- Use thick poha for the best texture.
- Do not soak poha for too long, or it may become mushy.
- Add vegetables like peas or carrots for extra nutrition.
- A squeeze of lemon enhances the flavor beautifully.
