Aam Ke Achar Ki Recipe
Aam ka achar (mango pickle) is one of the most loved traditional Indian pickles. It is spicy, tangy, and full of flavor. Made with raw mangoes and aromatic spices, this pickle enhances the taste of any simple meal like dal, rice, or paratha.

Ingredients
- 1 kg raw mangoes
- 4–5 tablespoons salt
- 2 tablespoons turmeric powder
- 2 tablespoons red chili powder
- 2 tablespoons fennel seeds (saunf)
- 1 tablespoon fenugreek seeds (methi)
- 1 tablespoon mustard seeds (rai)
- 1 teaspoon nigella seeds (kalonji)
- 1–1.5 cups mustard oil
Method
1. Prepare Mangoes
Wash and cut raw mangoes into medium pieces. Dry them completely under sunlight for a few hours.
2. Add Salt & Turmeric
Mix mango pieces with salt and turmeric powder. Keep them in a dry container for 1 day.
3. Prepare Spices
Lightly roast fennel, fenugreek, and mustard seeds. Crush them coarsely.
4. Mix Ingredients
Add all spices, red chili powder, and kalonji to mango pieces. Mix well.
5. Add Oil
Heat mustard oil until it starts smoking, then cool it slightly. Pour it over the mango mixture.
6. Store
Transfer the pickle into a clean, dry glass jar. Keep it in sunlight for 4–5 days and shake it daily.
