Ingredients

For Vada

  • 1 cup urad dal (soaked overnight)
  • 1–2 green chilies
  • 1 inch ginger
  • Salt to taste
  • Oil for frying

For Soaking

  • 2 cups warm water
  • 1/2 teaspoon salt
  • A pinch of asafoetida (hing)

For Dahi (Yogurt)

  • 2 cups thick curd
  • 2–3 tablespoons sugar
  • Salt to taste (optional)
  • 1/2 teaspoon roasted cumin powder

For Topping

  • Tamarind chutney
  • Green chutney
  • Red chili powder
  • Black salt
  • Roasted cumin powder
  • Chopped coriander

Method

1. Prepare Batter

Soak urad dal overnight and grind it into a smooth, fluffy batter using minimal water. Add salt and mix well.

2. Fry Vadas

Heat oil and drop small portions of batter. Fry until golden and crispy outside.

3. Soak Vadas

Soak fried vadas in warm salted water for 15–20 minutes until soft. Squeeze gently to remove excess water.

4. Prepare Yogurt

Whisk curd with sugar, salt, and roasted cumin powder until smooth.

5. Assemble Dahi Vada

Place soaked vadas in a bowl, pour yogurt over them, and add chutneys and spices.
